Foxtail Millet Idly
Ingredients
- 1 cup foxtail millet idly rava
- 1/2 cup urad dal (split black gram)
- 1/4 teaspoon fenugreek seeds
- Salt to taste
- Water as needed
Instructions
Soak the Ingredients:
Wash the urad dal and fenugreek seeds thoroughly. Soak them together in water for about 4-6 hours or overnight. Separately, wash the foxtail millet idly rava and soak it in water for about 1-2 hours. Prepare the Batter: Drain the soaked urad dal and fenugreek seeds. Grind them into a smooth, fluffy batter using a blender, adding water as needed. Drain the soaked foxtail millet idly rava and add it to the urad dal batter. Mix well. Add salt to taste and mix again. The batter should be of pouring consistency, similar to traditional idly batter. If needed, add a little water to achieve the right consistency.
Ferment the Batter:
Cover the batter and let it ferment in a warm place for 8-12 hours or overnight. The batter should rise and become slightly bubbly. Prepare the Idlis: Once the batter is fermented, mix it gently. Grease idly plates or molds with a little oil. Pour the batter into the idly molds, filling them about three-quarters full. Steam the idlis in an idly steamer or a large pot with a steaming rack for about 10-12 minutes, or until a toothpick inserted into the center of an idly comes out clean. Serve: Remove the idly plates from the steamer and let them cool for a few minutes. Carefully remove the idlis from the molds using a spoon. Serve hot with coconut chutney, sambar, or any chutney of your choice. Enjoy your healthy and delicious foxtail millet idlis!
