BrownTop Millet Idly
Ingredients
  • 1 cup Browntop Idli Rava
  • 1 cup yogurt (curd)
  • Salt to taste
  • Water as needed
  • 1/2 teaspoon baking soda (optional, for fermentation)
Instructions
Preparing the Batter:

Rinse the Browntop Idli Rava thoroughly under running water. Drain well.
In a bowl, mix the Browntop Idli Rava and yogurt (curd) together. Add water gradually to make a thick batter.
The batter consistency should be like regular idli batter, neither too thick nor too thin.
Cover the bowl and let the batter ferment overnight or for at least 6-8 hours.
Making the Idlis:

Once the batter has fermented, it should have risen a bit and have a slightly sour smell.
Add salt to taste and mix well.
If using baking soda, dissolve it in a tablespoon of water and mix it into the batter just before making idlis. This helps in making softer idlis.
Steaming the Idlis:

Grease the idli molds with oil or ghee.
Pour the batter into each mold, filling them almost to the top.
Heat water in a steamer or idli cooker. Once the water is boiling, place the idli stand inside and steam for about 10-12 minutes on medium-high heat, or until a toothpick inserted into the idlis comes out clean.
Serve:

Once done, remove the idli stand from the steamer and let it cool for a minute or two.
Gently remove the idlis from the molds using a spoon or knife.
Serve hot with chutney, sambar, or any side dish of your choice.
