Foxtail Millet Upma

- 1 cup foxtail millet
- 2 cups water
- 1 onion, finely chopped
- 1 carrot, finely chopped
- 1/4 cup green peas
- 1/4 cup chopped beans
- 1 tomato, finely chopped
- 2 green chilies, slit
- 1 tsp mustard seeds
- 1 tsp urad dal
- 1 tsp chana dal
- A few curry leaves
- 1/2 tsp turmeric powder
- Salt to taste
- 2 tbsp oil
- Fresh coriander leaves for garnish
- Lemon juice (optional)

Instructions
Wash and soak the foxtail millet for 15-20 minutes. Heat oil in a pan and add mustard seeds. Once they splutter, add urad dal and chana dal. Fry until golden brown. Add curry leaves, green chilies, and chopped onions. Sauté until onions turn translucent. Add chopped tomatoes, carrots, beans, and green peas. Cook until the vegetables are tender. Drain the soaked millet and add it to the pan. Mix well. Add water, turmeric powder, and salt. Stir well. Cover and cook on low heat until the millet is cooked and the water is absorbed (about 10–15 minutes). Garnish with fresh coriander leaves and a squeeze of lemon juice if desired. Serve hot.
Foxtail Millet Pongal

- 1 cup foxtail millet
- 1/2 cup yellow moong dal
- 4 cups water
- 1 tsp black peppercorns
- 1 tsp cumin seeds
- A pinch of asafoetida (hing)
- 1-inch ginger, finely chopped
- 2 tbsp ghee
- Salt to taste
- Cashew nuts for garnish
- 10 to 12 curry leaves

Instructions
Wash and soak foxtail millet and moong dal separately for 15-20 minutes. In a pressure cooker, heat ghee and add cumin seeds, black peppercorns, and asafoetida. Fry for a minute. Add chopped ginger and curry leaves. Sauté for a minute. Drain the soaked millet and dal, then add them to the cooker. Mix well. Add water and salt. Stir well. Close the lid and cook for 3-4 whistles on medium heat. Once the pressure releases, open the lid and mix well. Garnish with roasted cashew nuts. Serve hot with coconut chutney or sambar.
